This fish dish pleases everyone...the secret's in the bacon!
Stovetop, Pot (small), Frying pan, Colander
Wash & peel the butternut squash. Cut it in half lengthwise, then scoop out the seeds. Cube the squash.
Add the squash to a pot of salted boiling water. Cook for 15 min, or until fork-tender.
Season the cod with olive oil, salt & pepper. Wrap each fillet with 2 slices of bacon.
Melt half the butter in a pan over medium heat. Add the bacon-wrapped cod to the pan. Brown on both sides. Then reduce the heat to low & cover. Cook for 5-7 min, or until the cod is cooked to your liking.
Drain the squash. Add the rest of the butter. Season with salt & pepper. Mash or purée until smooth & creamy.
Serve the bacon-wrapped cod over the mashed squash. Season with salt & pepper. Garnish with arugula leaves (optional). Enjoy!
