Ingredients

Make sure you have...

Butter (unsalted) (1 Dab), 
Olive oil (1 tbsp)

Stovetop, Frying pan, Oven, Knife

French fries (frozen)

Step 1

Preheat the oven to 425°F. Add the fries to a sheet tray lined with parchment paper & bake according to package directions, about 20 min.

White mushrooms (whole)

Step 2

Meanwhile, clean & thinly slice the mushrooms.

Olive oil

Step 3

Heat a drizzle of olive oil in a skillet on high heat. Add the mushrooms, season with salt & pepper. Stir & cook for 7-9 min until nicely browned.

Egg

Step 4

In a bowl, crack the eggs. Season with salt & pepper, then whisk.

Gruyère cheese (shredded)
Butter (unsalted)

Step 5

Add a dab of butter to the skillet with the mushrooms. Pour the eggs into the pan. Sprinkle with grated cheese & cook for 5-6 min on medium-low heat. Once the bottom of the omelette is cooked to your liking, fold it in half & remove from the heat.

Step 6

Remove the fries from the oven.

Step 7

Serve the omelette with the fries. Garnish with some fresh herbs if you have them. Enjoy!
