Step 1

Crack the eggs into a small bowl. Season with salt & pepper. Whisk the eggs.

Heat a drizzle of oil in a pan over medium heat. Pour the eggs into the pan.

Cook for 2 min, or until the omelette begins to firm up around the edges.

Cream cheese

Step 4

Add dollops of cream cheese over half the omelette. Season with salt & pepper. Then carefully fold the omelette in half. Reduce the heat to low & cover the pan. Let the omelette cook for 3-5 min, or until cooked to your liking.

Arugula

Step 5

Remove from heat. Serve the omelette alongside a bed of arugula. Drizzle the salad with olive oil. Season it with salt & pepper. Enjoy!
