Heavy cream
Sugar (granulated)
Mascarpone

Step 1

Whip the heavy cream with an electric mixer. Be sure the cream & mixing bowl are very cold! Then add the mascarpone & a third of the sugar. Beat the cream again.

Step 2

Wash & cut the apricots in half. Remove the pits.

Butter (unsalted)

Step 3

Melt a dab of butter in a pan over medium heat. Add the rest of the sugar & stir. Arrange the apricots in the pan, flesh-side down.

Step 4

Cook the apricots for 4 min on each side, or until caramelized & golden. Add more butter or reduce the heat, if needed.

Step 5

Serve the apricots with dollops of whipped marscapone-cream. Garnish with fresh mint leaves (optional). Feel free to crumble your favorite shortbread cookie or biscuit over top. Enjoy!
