Carrots (fresh)

Step 1

Preheat the oven to 400°F. Peel & cut the carrots lengthwise into small sticks.

Broccoli (fresh)

Step 2

Wash & cut the broccoli into florets. (For more tender broccoli, pre-steam for 5 min before roasting).

Parsley (fresh)

Step 3

Rinse & finely chop the parsley.

Olive oil

Step 4

On a parchment-lined sheet tray, add the carrots & broccoli. Drizzle with olive oil. Season with salt & pepper then toss it all together. Roast in the oven for 25 min at 400°F.

Butter (unsalted)
Garlic

Step 5

Prepare the garlic butter. In a bowl, mix softened butter, grated or minced garlic & parsley. Add salt & pepper. Mix well to combine until mostly smooth.

Salmon (fresh)

Step 6

After 25 min of cooking, remove the veggies from the oven & create some space for the salmon. Add the salmon to the tray & spread the garlic butter over the fillet using a brush or spoon.

Step 7

Return everything to the oven & roast for 10-15 min at 400°F until the salmon is fully cooked. Garnish with a little chopped parsley if you have any left. Serve & enjoy!
