White rice (long grain)

Step 1

Cook the rice according to package instructions. Once cooked through, drain the rice & set aside.

Pork (tenderloin)

Step 2

As the rice cooks, heat a drizzle of olive oil in a pan over medium heat. Pat the pork dry & add it to the pan. Season with salt & pepper. Sear for 15-20 min, flipping occasionally, until browned on all sides & cooked through. Remove the meat & transfer to a cutting board. Rest for several min before slicing into 1 inch-thick medallions.

Green beans (frozen)

Step 3

In another pot of salted, boiling water, cook the green beans for 3 min. Drain & set aside.

Apricot jam
Balsamic vinegar
Sugar (granulated)

Step 4

Add the apricot jam & balsamic vinegar to a small pot over low heat. Simmer & stir for 1 min. Add in the sugar & mix. Simmer 3-4 min until thickened the sauce has thickened.

Step 5

Serve the sliced pork tenderloin with a side of fluffy rice & green beans. Drizzle the meat with the apricot glaze & season to taste. Enjoy!
