Cook the rice according to package instructions. (Preparing the rice the night before is even better!)
Cut the chicken into 1-inch pieces.
For better browning, dredge the chicken in flour (optional).
Thread the chicken onto skewers.
Heat a drizzle of oil in a pan over medium heat. Add the chicken skewers. Season with salt & pepper.
Cook the chicken skewers for 3-5 min, turning frequently.
Drizzle half of the teriyaki sauce over the chicken. Cook for 2-3 min, spooning the sauce over the chicken. Add a splash of water if needed.
Sprinkle the skewers with sesame seeds (optional). Remove the skewers from the pan & cover to keep warm.
In the same pan, heat a drizzle of oil over medium-high heat. Add the rice. Season generously with salt & pepper.
Add the frozen peas & garlic. Stir fry for 2-3 min, or until all is heated through.
Serve the skewers over the fried rice. Garnish with more teriyaki sauce (optional). Enjoy!
