Stovetop, Pot (small)


Sweet potato

Step 1

Wash & peel the sweet potato. Chop into 1 inch cubes.

Heat a drizzle of oil in a pan over medium-high heat. Add the sweet potato cubes & cook, stirring for 2-3 min.

Onion (yellow)

Mince the onion.

Add the onion to the pan with the sweet potatoes. Season with salt & stir together. Then continue cooking for 1-2 min.

Barley (pearl)
Broth (vegetable)

Step 5

Add the dry quinoa. Add the veggie broth. (Or use a bouillon cube with water!) Stir to combine.

Step 6

Bring to a slight boil. Then, cover & simmer over low heat for 10-15 min, or until quinoa is cooked to your liking.

Spinach (fresh)

Step 7

Turn off the heat. Add fresh spinach. Season with salt & pepper. Stir until the leaves have wilted. Add a healthy squeeze of lemon juice.

Goat cheese

Step 8

Garnish with crumbled goat cheese & a drizzle of olive oil. Dig in!
