Your chicken & rice has been kicked up a notch!
Stovetop, Pot (small)
Thinly slice the garlic.
Heat a drizzle of oil in a pot over medium heat. Add the garlic.
Cook the garlic for 3 min, or until golden brown.
Peel & dice the onion.
In a small bowl, whisk together the cayenne & a healthy drizzle of oil. Set aside.
Add the onion to the pot with the garlic. Cook for 1 min.
Add the chicken stock, chicken breast & rice to the pot.
Cover & cook for 15-20 min, or until the rice & chicken are cooked through. Add a splash of water if needed.
Remove the chicken from the soup. Shred it into pieces.
Add the shredded chicken back to the soup. Add the spinach. Season with salt & pepper. Simmer for 1 min.
Serve the soup with your chili oil.
Garnish with fresh parsley & an extra pinch of cayenne (optional). Enjoy!
