Cook the pasta according to the package instructions.
Slice the smoked salmon into pieces.
Drain the pasta & return it to the same pot. Add a drizzle of olive oil, the crème fraîche, lemon juice (1/4 of a lemon per serving) & lemon zest. Season with salt & pepper. Mix it all together.
Add the sliced salmon & grated parmesan. Toss to combine. Finish with another drizzle of olive oil. Enjoy!
