Yellow onion

Step 1

Peel & chop the onion. Heat a drizzle of oil in a pan over medium heat. Add the onion. Cook, stirring for 2-3 min.

Tomato sauce
Garlic
Paprika

Step 2

Add the canned tomatoes, paprika, salt & pepper to the pan. Then add grated or crushed garlic. Stir to combine.

Egg

Step 3

Use a spoon to make a well for each egg in the sauce. Gently break an egg into each well.

Step 4

Reduce the heat to medium-low. Cover & cook the eggs for 3-4 min, or until cooked to your liking.

Avocado
Feta cheese (block)
Cilantro (fresh)

Step 5

Remove from the heat. Top with crumbled feta & sliced avocado. Garnish with fresh cilantro (optional). Season with salt & pepper. Enjoy! (It's delicious with toasted bread or tortillas!)
