A French roast with butter & shallots. Extraordinaire!

Step 1
Preheat the oven to 450°F. Peel & slice the shallot.
Step 2
Cut the butter into small pieces. Arrange half the butter in a baking dish. Top with the beef roast, fat-side up. Arrange the remaining butter & shallot slices over the roast. Season with salt & pepper. Cover & cook for 10 min at 450°F.
Step 3
Reduce the oven to 375°F. Remove the roast from the oven. Flip it over in the dish. Baste it with the shallot butter. Cover & cook for another 30 min, or until the beef is cooked to your liking.
Step 4
Remove the roast from the pot & let it rest for 20 min.
Step 5
Add another dab of butter & a splash of red wine (optional) to the baking dish. Stir the au jus. Return the dish to the oven. Let the au jus cook until the roast has rested. Slice the beef. Serve drizzled with the sauce. Enjoy!
