Basmati rice

Step 1

Cook the rice according to the package instructions.

Cauliflower (fresh)

Step 2

Wash & cut the cauliflower into small florets.

Step 3

Peel & dice the onion.

Curry powder

Step 4

Heat a drizzle of oil in a pot over medium heat. Add the onion, tomato paste & curry powder. Cook, stirring for 2 min.

Red lentils (dry)
Cauliflower (fresh)

Step 5

Add the red lentils, cauliflower & a splash of water. Season with salt & pepper.

Coconut milk

Step 6

Add the coconut milk & stir. Reduce the heat to low, cover & simmer for 10-15 min. Stir occasionally, adding more water if needed.

Cilantro (fresh)

Step 7

Serve the red lentil & cauliflower curry alongside fluffed rice. Garnish with chopped cilantro (optional). Enjoy!
