Step 1

In a blender or food processor, purée the parsley, garlic, salt, pepper, most of the walnuts & 2 tbsp of olive oil (per person). Reserve a few nuts for garnish.

Step 2

Wash, core & thinly slice the apple.

Goat cheese

Step 3

Add the lettuce, apple, crumbled goat cheese, pesto dressing, salt, pepper & a splash of olive oil to a bowl. Crush the remaining walnuts over top. Toss to combine & enjoy!
