Andouille sausage (smoked)

Step 1

Slice the sausage.

Green onion (scallions)

Step 2

Rinse & thinly slice the scallion. Separate the white & green slices.

Heat a drizzle of oil in a skillet over medium-high heat. Add the sausage & cook for 2 min per side until nicely browned.

White rice (long grain)
Tomatoes (fire roasted, diced)
Cajun seasoning

Step 4

Add in the white scallions, rice, cajun seasoning & diced tomatoes (if you want this dish spicier, add a bit more cajun seasoning to your liking!) Stir & cook for 2 min.

Mixed vegetables (frozen)

Stir in broth & frozen mixed veggies until everything is combined.

Raw shrimp

Step 6

Nestle the shrimp into the sauce mixture. Cover & reduce the heat. Simmer for 15-20 min, or until the rice & shrimp are fully cooked.

Remove the lid & give everything a stir! Serve hot with green scallion slices! Enjoy!
