Step 1
Peel & mince the onion & garlic.
Step 2
Add a drizzle of olive oil to a pan over medium heat. Add the onion & garlic. Cook, stirring for 2 min.
Step 3
Add the peas, coconut milk, green curry paste & 0.5 cup of water (per person). Stir to combine.
Step 4
Reduce the heat, cover & simmer for 8 min.
Step 5
Turn off the heat. Using an immersion blender, purée the soup until smooth & creamy. Add a bit of water or coconut milk if too thick.
Step 6
Serve garnished with fresh cilantro, lime wedges & a drizzle of coconut milk (optional). Season with salt & pepper. Enjoy!
