Chop the onion.

Wash the cauliflower & cut into florets.

Add a drizzle of olive oil to a pot over medium heat. Add the onion & cook for 2 min.

Crush or mince the garlic. Grate or mince the ginger.

Reduce the heat to low. Cover & simmer for 10 min.

Chickpeas (canned)

After 10 min, add drained chickpeas to the pot.

Step 9

Serve in soup bowls, garnished with chopped cilantro & lime wedges (optional). Enjoy!
