Step 1

Preheat the oven to 400°F. Cut off the ends of the eggplant. Thinly slice the eggplant lengthwise. Mince the garlic.

Heat a drizzle of olive oil in a pan over medium heat. Add the garlic & cook for 1 min. Lay the eggplant in the pan in a single layer.

Step 3

Cook for 2-3 min on each side. Remove the cooked eggplant & set aside. Continue cooking the rest of the slices. Add more oil if needed.

Mozzarella (fresh)

Step 4

Thinly slice or shred the mozzarella.

Tomato purée

Step 5

Spread a bit of the tomato purée over the bottom of a baking dish. Add a layer of eggplant.

Parmesan (grated)
Mozzarella (fresh)

Step 6

Add a bit of the parmesan & mozzarella over top. Season with salt & pepper. Keep layering until all the ingredients are used.

Step 7

Bake for 30 min. Enjoy!
