Step 1
Preheat the oven to 400°F. Trim the ends of the eggplant. Thinly slice the eggplant lengthwise.
Step 2
Thinly slice the mozzarella.
Step 3
Heat a drizzle of olive oil in a pan over medium heat. Grate in the garlic. Stir & cook for 1 min. Working in batches, add the eggplant slices in an even layer & brown them for 2-3 minutes on each side until they are golden brown. Remove from the heat.
Step 4
In a baking dish, cover the base with tomato sauce. Add a layer of the eggplant slices, grated parmesan, mozzarella & pepper on top. Repeat until all of the ingredients are used up, finishing with a layer of tomato sauce, mozzarella & parmesan.
Step 5
Bake in the oven for 25-30 min. Serve & enjoy!
