Lentils (cooked)
Tomatoes (canned, crushed)
Taco seasoning

Step 1

Preheat the oven to 450°F. Heat a drizzle of oil in a pan over medium heat. Add pre-cooked lentils, diced tomatoes & taco seasoning. Simmer for 6-7 min. Stirring occasionally until the mix has thickened.

Flour tortilla (medium)
Shredded lettuce
Vegan cheese (shredded)

Step 2

On a sheet tray lined with parchment paper, heat the tortillas in the oven for 1 min. Spread the taco mixture on one side of each tortilla. Sprinkle a bit of lettuce & a layer of cheese. Fold over the other half of the tortilla.

Step 3

Bake in the oven for 10-12 min, flipping halfway. When the tacos are crisp & the cheese has melted, remove from the oven. Serve with sour cream if you have it & enjoy!
