Step 1

Be sure to follow the filo dough package instructions! Preheat the oven to 400°F. Cut the filo sheets into quarters.

Generously brush each quarter with olive oil. Decoratively overlap the quarters in pairs to double the thickness of each.

Goat cheese

Place a dollop of goat cheese onto each filo bite. Season with salt & pepper. Gather the edges to close the parcels. Secure them shut with toothpicks.

Place the filo bites on a parchment-lined baking sheet. Drizzle with half of the honey.

Bake for 10-15 min, or until golden & crisp.

In a small bowl, whisk together the vinegar, mustard, salt, pepper, the rest of the honey & a drizzle of olive oil.

Remove the crispy filo bites from the oven. Arrange the salad greens in a serving bowl. Top with the filo bites. Season with salt & pepper. Drizzle with vinaigrette. Enjoy!
