Leeks

Step 1

Preheat the oven to 350°F. Cut off the stem & dark green leaves of the leek. Then slice the leek in half crosswise & lengthwise. Rinse the leek under running water.

Add the sliced leek to a hot pan with a splash of water & pinch of salt. Cover & cook it over medium-low heat for 15 min.

Garlic

Step 3

Peel & mince the garlic.

Chop the parsley.

In a small bowl, combine the parsley, garlic, bread crumbs, salt, pepper & a drizzle of olive oil. Mix it all together.

Step 6

When the leeks are tender, remove them from the heat.

Lay the leeks & salmon on a baking tray.

Step 8

Spread the mustard over the salmon. Coat the leek & salmon with the bread crumb mixture. Bake for 15-20 min at 350°F.
