Stovetop, Pot (small), Immersion blender
Peel & chop the onion. Heat a drizzle of oil in a pot over medium heat. Add the onion & cumin. Cook, stirring for 2 min.
Add the dry red lentils, tomatoes & 1 cup of water (per person). Season with salt & pepper. Stir to combine.
Bring to a boil. Then reduce the heat to low, cover & simmer for 15 min.
Purée the soup with an immersion blender, blender or food processor. Add a bit of water if it's too thick.
Season to taste. Serve & enjoy!
