Cook the bacon in a dry pan over medium heat for 2-3 min, or until done to your liking. Set aside. Preheat the oven to 400°F. In a small bowl, mix together the grated parmesan, crème fraîche, salt & pepper.
Grease a baking dish. Spread the cheesy cream mixture over the base of the dish.
Add the baby spinach. Mix it all together. Arrange the bacon slices in the pan.
Then use a spoon to make a well for each egg in the cream. Crack the eggs into the wells. Season with salt & pepper. Add a pinch of paprika (optional).
Bake for 20-25 min, or until the eggs are cooked to your liking. Enjoy!
