Stovetop, Pot (small), Colander, Frying pan
Bring a pot of salted water to a boil.
Wash & cut the broccoli & cauliflower into florets. Add the veggies to the pot of boiling water. Cook for 5 min. Drain & set aside.
Heat a drizzle of oil in a pan over medium-high heat. Pat the cod bone-dry with a paper towel. Add the fish to the pan. Cook for 3 min on each side.
In a small bowl, whisk together the vinegar, lemon juice, minced shallots, salt, pepper & a drizzle of oil.
Serve the cod alongside the vegetables. Drizzle with the shallot vinaigrette. Season with salt & pepper. Enjoy!
