White rice (long grain)

Step 1

Heat a drizzle of oil in a pot over medium heat. Add the rice. Cook, stirring for 2 min.

Coconut milk

Step 2

Add the coconut milk & 0.25 cup of water (per person). Season generously with salt & pepper. Reduce the heat to low. Cover & simmer for 15-20 min, or until the rice is al dente.

Cooked shrimp
Corn (canned)

Step 3

Add the corn & shrimp. Season with salt & pepper. Stir over low heat until the shrimp is heated through. Adding more coconut milk if needed.

Cilantro (fresh)
Lime

Step 4

Top with fresh cilantro. Garnish each plate with a lime wedge (optional). Season with salt & pepper. Enjoy!
