Basmati rice

Step 1

Cook the rice according to the package instructions.

Garlic
Red onion

Step 2

Peel & mince the onion & garlic.

Curry powder
Cumin (ground)
Ginger (ground)

Step 3

Heat a drizzle of oil in a pan over medium heat. Add the garlic, onion, curry, cumin & ginger. Season with salt. Cook, stirring for 3 min.

Tomato sauce
Coconut milk
Chickpeas (canned)

Step 4

Add tomatoes & coconut milk to the pan & stir. When it comes to a simmer, add the chickpeas. Season with salt & pepper. Stir Add a splash of water if needed & stir again. Reduce the heat to low, cover & simmer for 5-7 min.

Cilantro (fresh)

Step 5

Serve the saucy chickpea curry over fluffed rice. Garnish with fresh cilantro (optional). Enjoy!
