Cook or soak the rice noodles according to the package instructions.
In a small bowl, whisk together the soy sauce, peanut butter, lime juice & sugar.
Cut the chicken into pieces.
Drain the rice noodles. Rinse under cold water to stop the cooking. Set aside.
Heat a drizzle of oil in a pan over medium heat. Add the grated or minced garlic & chicken. Sauté for 4 min.
Add the noodles, lime-peanut sauce & most of the bean sprouts (optional). Cook, stirring for 2 min.
Serve garnished with the rest of the bean sprouts, cilantro & peanuts (optional). Enjoy!
