Step 1

Cook the rice according to the package instructions.

Heat a drizzle of oil in a pan over medium-high heat. Add the chicken.

Sprinkle half of Taco spices or taco seasoning over one side of the chicken. Flip the chicken & sprinkle remaining spices. Cook for 4-5 min on each side, or until the chicken is cooked through.

Step 4

Add a splash of water to the pan to loosen the seasoning from the bottom. Spoon the pan sauce over the chicken to coat. Season with salt & pepper. Remove from the heat.

Check on your rice! Once cooked, fluff and set aside.

Step 6

Slice the chicken & serve over the rice. Top with corn, beans & chunks of avocado. Season with salt & pepper. Garnish with fresh cilantro (optional). Enjoy!
