Cherry tomatoes

Gnocchi

Step 1

Peel & mince or crush the garlic. Wash & halve the tomatoes. Heat a drizzle of olive oil in a pan over medium-high heat. Add the garlic & stir. Add the tomatoes. Season with salt & pepper. Add the gnocchi & a splash of water. Stir it all together.

Feta cheese (block)
Ricotta cheese
Arugula

Step 2

Cook for 3 min, or until the gnocchi is pan-fried. Add the feta & ricotta to the pan. Stir until combined & creamy. Turn off the heat & add the arugula.

Pine nuts
Basil (fresh)

Step 3

Serve the gnocchi garnished with basil & pine nuts (optional). Season with salt & pepper. Enjoy!
