Cauliflower (fresh)

Step 1

Wash the cauliflower. Remove the stem & leaves. Reserve a slice of cauliflower for garnish. Roughly chop the rest of the cauliflower. Peel & mince the onion & garlic.

Step 2

Heat a drizzle of oil in a large pot over medium heat. Add the onion & garlic. Cook, stirring for 2 min. Add the cauliflower. Cook for 5 min, stirring occasionally.

Step 3

Add just enough water to the pot to cover the veggies. Season with salt & pepper. Reduce the heat to low. Cover & simmer for 10 min.

Step 4

Meanwhile, fry the bacon in a dry pan until cooked to your liking.

Step 5

Remove the veggies from the heat. Add the parmesan to the pot. Use an immersion blender or blender to purée until smooth & creamy. Add a splash of water if too thick & blend again!

Step 6

Ladle the soup into bowls. Season with salt & pepper. Arrange the bacon slices & raw cauliflower over top. Add a final drizzle of olive oil. Enjoy!
