Step 1
Wash, peel & chop the carrots. Peel & grate the ginger.
Step 2
Heat a drizzle of olive oil in a pot over medium heat. Add the carrots & ginger. Cook, stirring for 2 min.
Step 3
Add 1 cup of water (per person). Season with salt & pepper. Reduce the heat to low, cover & simmer for 15 min.
Step 4
When the carrots are quite fork-tender, turn off the heat.
Step 5
Purée until smooth & creamy using an immersion blender, blender or food processor. Add a bit of water if too thick. Serve & enjoy!
