Step 1

Wash, peel & chop the carrots.

Step 2

Add the carrots, coconut milk & 0.5 cup of water (per serving) to a pot. Bring it to a boil. Season with salt & pepper. Reduce the heat to low, cover & simmer for 15-20 min. The carrots should be fork-tender.

Step 3

Then remove the pot from the heat. Purée the mixture until smooth & creamy, using an immersion blender, blender or food processor. Add a splash more water if too thick. Garnish with a drizzle of coconut milk (optional). Season with salt & pepper. Enjoy!
