Broccoli (fresh)

Step 1

Wash & chop the broccoli into florets. Cook the broccoli in a pot of salted boiling water for 5 min, or until fork-tender. Drain well. Add them to a food processor or blender.

Pulse a few times to chop but not purée the broccoli.

Feta cheese (block)

Step 3

In a mixing bowl, combine the broccoli, eggs, flour, crumbled feta, salt & pepper. Mix it all together.

Bread crumbs (plain)

Step 4

Pour the bread crumbs into a shallow dish. Using your hands, roll the broccoli mixture into 1-inch balls. Then roll each ball in the bread crumbs.

Step 5

After you transfer each patty to a piece of parchment paper, gently press it down to flatten. Continue with the rest of the broccoli mixture.

Step 6

Heat a few drizzles of olive oil in a pan over medium-high heat. Cook the patties for 2 min on each side, gently pressing down with a spatula before flipping them over.

Mixed baby greens

Step 7

Season with salt & pepper. Serve with a side salad. Enjoy!
