In a small bowl, whisk together the vinegar, mustard, salt, pepper & a healthy drizzle of olive oil.

Cut the avocado in half. Remove the pit. Then thinly slice the avocado. Slice the cooked beet.

Spring mix lettuce

Step 3

Add the lettuce to a salad bowl. Top with the avocado, beets, crumbled goat cheese & your homemade vinaigrette. Enjoy!
