White mushrooms (whole)

Step 1

Preheat the oven to 400°F. Clean & thinly slice the mushrooms.

Parmesan (grated)
Sour cream
Spinach (fresh)

Step 2

In a small bowl, mix together the sour cream, parmesan, salt, pepper & half the spinach.

Step 3

Butter a baking dish. Spread the cream-spinach mixture into the dish.

Egg
Goat cheese

Step 4

Gently break the eggs into the dish, keeping them spaced apart. Arrange the mushrooms & most of the goat cheese around the eggs. Season with salt & pepper.

Step 5

Bake for 15 min, or until the eggs are cooked to your liking.

Step 6

Garnish with the rest of the spinach & goat cheese. Season with salt & pepper. Brunch is served!
